Lauki Sabzi ~ Bottlegourd Curry



Bottle gourd is one vegetable which make appearances in our place only in blue moon.  This time I made sabji of half and use another half to make daal lauki.  My sister use to prepare in the same way, it's one of the simple recipe and taste very delicious. Adding milk and ginger gives more flavour and texture to the curry/sabji.





Ingredients:

Bottle gourd/ Lauki - 300gms [ 1 cup chopped]
Onion - 1 medium [optional]
Green chili - 3-4
Ginger - 1/2 tbsp [chopped]
Red chili Powder - 3/4 tsp
Turmeric - 1/2 tsp
Cumin Seeds - 1/2 tsp
Milk - 2tbsp [optional]
Cilantro - 2 tbsp [chopped]
Salt - to taste
Oil - 1-2 tbsp
Water - 1/2 cup or more

Method:

1. Wash, peel and chop bottle gourd into small pieces.

2. Peel, wash and chop onion, chop green chili.

3. In a pan heat oil, add cumin seeds and saute until it cracks.

4. Add chopped ginger and saute for 30secs, add chopped onion and green chili and saute until golden brown.

5. Now add chopped bottle gourd stir well and cook in medium heat for 5 minutes.

6. Add turmeric, red chili powder and stir well cook for 5 minutes.

7. Add salt, if the bottle gourd is not fully cooked then add 1/2 of water and cook until all the water evaporates in medium heat, stir in between.

8.  Add milk and stir, cook until milk evaporates fully.  (if the bottle gourd is not cooked fully yet then add more water and cook, the reason bottle gourd takes long time to cook mostly is it's not fresh).

9. Garnish with chopped cilantro and server with roti or daal rice.
