Wish you all Happy Navratra, enjoy the festive with fun, food and dance, here am starting the Navratri on a sweet note with Apple Rabdi. Apple Rabri is one of those desserts which is very simple to prepare but taste divine. It’s a pity that I ignored this wonderful dessert for so long but then I have my own reasons for it. You see I always assumed that making apple rabdi is a tough job!
We have this habit whenever we get apple, we will always have 2 apples unused for long time and that’s how I end up making Apple Compote Financiers. This time again I was thinking how to use these apple and finally made decision to try apple rabdi/rabri. It’s so easy to prepare with minimal ingredients and taste just so delicious, once tasted this can get addictive. Prepare this during navratra or give a miss to normal kheer and try this during Diwali.
Ingredients: [Serves 2-3]
Milk - 1/2 Litre [2 Cups]
Apple – 2 medium
Sugar – 3 tbsp or to taste
Almonds Sliced 5-6
Pista Sliced – 5-6
Saffron – few strands
Cardamom Powder – 1/4 tsp
Method:
1. Boil milk in a wide pan or wok and simmer in medium flame until it becomes half of the quantity. Take 2-3 tbsp of milk in a bowl and soak saffron for 10 minutes.
2. Meanwhile peel, core and grate apple. I kept the grated apple in a bowl of water is to prevent the grated apples from changing colour.
3. Add sugar to milk and simmer for 2-3 minutes. Now add grated apple and simmer for 5 minutes, apple should be tender by now.
4. Add saffron milk, cardamom powder and chopped nuts, mix well and simmer for 2 minutes.
Don’t use too much of saffron, just 5-6 strands is enough.
Serve hot/warm or cold. I like this to be cold.
Variations:
1. You can add 2-3tbsp condense milk. This will make the milk thick faster and also creamier, if using condensed milk reduced sugar.
2. Amount of sugar depends on how sweet apple is, so keep that in mind.

You didnt use khoya?Its not available here ,so will sure try your recipe...You know any short cut to make khoya?Can we add baking soda to thicken the milk faster?Plz pass the info if you know..Special Thanks 4 following deepsrecipes..

@Deepsrecipes ...I don't find a reason to use khoya, this apple rabdi is creamy, rich and delicious just like this. I rather not add more fat to it :)
I think adding soda is big no no, it will spoil the taste and split the milk a little, I have personally never tried adding soda, and I don't like these kind of shortcuts.
I have mention in the post to use condense milk, it will thicken the milk faster and also creamier but do use less sugar.
